What are Oblica and Bjelica?

Oblica is Croatia’s most widespread olive variety, found along the entire Dalmatian coast as well as in Istria. It produces a rounded, rather soft oil with pronounced fruitiness. Bjelica is an Istrian variety whose name derives from the Slavic word for “white,” referring to the light colour of the fruit before full ripeness; it adds structure and a firm bitterness.

Together, the two create an oil that is neither as bitter as a single-variety Buža nor as approachable as a Leccino. A blend available in this form only in this vintage.

What a small batch actually means

The term is widely used and rarely explained. Here, it means that the quantity depends on the selection of trees whose olives are ripe before the main harvest, and that selection is made by hand in the field. There is therefore no target quantity to be met, but rather a quantity that happens to result. This has a practical disadvantage that should be stated plainly: this oil cannot become the standard oil in your household, because next year it will not be the same. It is an oil for tasting, comparing, and giving as a gift.

Why olive oil varies from one vintage to another

Olive oil is a product like wine, not like an industrial cooking oil. The amount of rain, the temperature pattern in spring, the timing of the harvest, and the ripeness of the fruit change the result every year. Large brands offset these fluctuations through blending so that the taste remains consistent. An estate that bottles a small batch does the opposite and leaves the differences intact.

It measures the proportion of free fatty acids and shows how carefully the olives were harvested and how quickly they were pressed. Extra virgin olive oil may contain up to 0.80%. This oil contains 0.09%, around eight times below the limit.

What is the peroxide value?

It shows how far the oxidation has progressed. Up to 20.0 mEq O₂/kg is permitted; this oil is at 2.6. Low values indicate fresh, gentle processing.

Is the oil cold-extracted?

Yes. The designation is legally defined and permitted only when the oil is obtained at temperatures below 27 °C through centrifugation or percolation, without adding heat that would alter the aromas.
