The name

What is Condimento Bianco?

Condimento Bianco is the Italian name for white balsamic vinegar, also called balsamico bianco. Like a dark balsamic, it is made from grape must and wine vinegar. But white grapes are used, and the must is not cooked down until it takes on colour. The result is pale and golden. In Switzerland the term is known mainly from supermarket shelves.

Unlike Aceto Balsamico di Modena PGI, white balsamic is not a protected name. There are no EU rules on its ingredients, origin or ageing, so only the ingredient list tells you what is in the bottle. This Condimento Bianco has two ingredients, both organically grown, and is made and bottled in Modena.

About the product

Why white balsamic vinegar stays pale

A dark balsamic gets its colour from cooked grape must, which simmers for hours and darkens as it reduces, and from ageing in wood. For white balsamic vinegar, white grapes are used and the must is processed so that it stays pale. In this Condimento Bianco it is concentrated grape must which, according to the label, is slowly fermented and turned into vinegar. The result is a golden balsamic that won’t tint fish, salad or a pale sauce.

White balsamic condiment: a name without protection

Dark Aceto Balsamico di Modena PGI and Aceto Balsamico Tradizionale PDO follow fixed rules on ingredients, origin and ageing. White balsamic has none. The word “balsamico” on its own is not protected, as the European Court of Justice ruled in 2019. A white balsamic condiment can therefore be made from very different ingredients and produced anywhere. This Condimento Bianco uses two organic ingredients from Italy, processed in Modena.

One house, three balsamics

Casa del Balsamico Modenese is on the Via Emilia Est in Modena and is the Cattani family’s acetaia. All three balsamics in our range come from there: the pale Organic Condimento Bianco, the dark Organic Balsamico for everyday use and Cattani Oro, a 40-year-aged Aceto Balsamico Invecchiato that you use drop by drop.

Frequently Asked Questions (FAQ)

What is the difference between white and dark balsamic vinegar?

White balsamic vinegar is made from white grape must that is not cooked down until it turns dark. It stays pale and suits dishes whose colour you want to keep. Dark Aceto Balsamico di Modena is protected as a PGI, white balsamic is not.

Is condimento bianco the same as white balsamic vinegar?

Yes. “Condimento” is Italian for condiment or seasoning. In English the same product is sold as white balsamic vinegar or white balsamic condiment. The German name on our label is “Essigzubereitung Weisser Balsamico”, a white balsamic vinegar preparation.

Is white balsamic vinegar the same as white vinegar?

No. Under food law, white balsamic is a vinegar preparation, because besides wine vinegar it also contains concentrated grape must. That is why it tastes rounder and sweeter than a plain wine vinegar.

Why isn’t this Aceto Balsamico di Modena PGI?

The PGI rules for Aceto Balsamico di Modena require a deep brown colour. A pale balsamic therefore cannot carry this name and is sold as a condimento.

How do you use white balsamic vinegar?

In dressings for green, cucumber or potato salad, with fish, seafood and carpaccio, in marinades, to deglaze pale sauces and risotto, or in a fruit salad.

How much sugar is in white balsamic vinegar?

This Condimento Bianco contains 49.3 g of sugar per 100 ml. The sugar comes from the concentrated grape must. As you use it by the spoonful, the amount per serving is small.

Does white balsamic vinegar need to be refrigerated?

No, it doesn’t need to go in the fridge. Unopened, it keeps until the best-before date on the bottle. Tightly closed and stored in a cool, dark place, it also keeps for a long time after opening.

How is it different from your organic balsamic vinegar?

Both come from the same house in Modena. Our organic balsamic is a dark Aceto Balsamico di Modena PGI made from cooked grape must. The Condimento Bianco is pale, made from white grape must, and meant for dishes where the dark one would change the colour.

Where do the ingredients come from?

From organic farming in Italy. This is inspected by ICEA, control body code IT BIO 006.
