What is a single-variety olive oil?

Single-variety (also called monovarietal) means the oil is made from one olive variety only. That is the exception rather than the rule. Most olive oils on the shelf are blends, often of several varieties and not infrequently from several countries, because blending makes it possible to keep the flavour the same year after year.

A single-variety oil does the opposite: it shows what one variety produces in one particular place in one particular year, with all the natural variation that brings. Leccino originally comes from Tuscany and is known as a robust, frost-tolerant variety. In Istria, on iron-rich red soil, it develops a noticeably fruitier profile and a milder pungency than in its home region. The same tree, a different oil.

About the product

Leccino olive oil: an Italian variety on Istrian soil

Leccino is one of Italy’s most widely grown olive varieties, and it was cultivated in Istria long before today’s borders were drawn. For centuries the peninsula lay within the Venetian sphere of influence, and the varieties travelled with it. What has changed is not the tree but the place: terra rossa, an iron-rich red soil over limestone, combined with one of the northernmost olive-growing areas of the Adriatic, where nights are cooler than in central Italy. The result is a fruity olive oil from the same variety, with more fruit and less bitterness.

What the colour means (and what it doesn’t)

Leccino oil is strikingly green. This comes from the chlorophyll content of the olives at harvest. The important point: colour says nothing about quality. In official sensory assessment, olive oil is tasted from blue glasses so that the colour cannot influence the verdict. Green is a characteristic, not a mark of quality: beautiful to look at, but not an argument. What does count is how the oil is made: this is a cold extracted olive oil, obtained below 27 °C.

Frequently Asked Questions (FAQ)

What is single variety olive oil?

An oil made from one single olive variety, also called monovarietal. Most oils on the market, by contrast, are blends of several varieties and often of several countries. A single-variety oil shows the character of one variety in one place, with the natural variation from year to year.

What does Leccino olive oil taste like?

Clearly fruity, with a balanced pungency and only a light bitter note. It is milder than single-variety oils from Buža and milder than our multi-variety blend, without being flat.

What is the best olive oil for salad?

A fruity oil that is not too bitter, because it does not mask the other ingredients. Of our four oils, Leccino is the obvious choice here; the more robust varieties go better with pulses, grilled vegetables and meat.

Why is olive oil green?

Because of the chlorophyll in the olives at harvest time. The colour says nothing about quality. In official tastings, dark blue glasses are used so that the colour does not influence the verdict.

Where does the Leccino olive variety come from?

Originally from Italy. It has been grown in Istria for centuries, and on the region’s red, iron-rich soil it develops a fruitier profile than in its home region.

What does olive oil acidity mean?

Acidity measures the proportion of free fatty acids and shows how carefully the olives were harvested and how quickly they were pressed. Extra virgin olive oil may have up to 0.80%. This oil comes in at 0.09%, almost nine times below the limit.

What is the peroxide value of olive oil?

It shows how far oxidation has progressed. Up to 20.0 mEq O₂/kg is permitted; this oil comes in at 3.1. Low values point to fresh, careful processing.

Is this olive oil cold extracted?

Yes. The term is legally defined and may only be used if the oil is obtained below 27 °C by centrifugation or percolation, without added heat that would change the aromas.

What size bottle is the oil available in?

Only in the 500 ml bottle.
