Large wild thistle populations can be found, for example, in Sardinia, where almost all sheep pastures are covered with thistles.

The unique thistle honey is harvested directly from Sardinia as well as from regional, supraregional, and natural locations of our partner apiaries in Italy.

Usage:

With our thistle honey, you can perfectly round off dressings with slightly sweet components. It also pairs excellently with mustard and balsamic vinegar. This honey is ideal for refining both hot and cold drinks with a mild sweetness. You can ideally complement fruity smoothies with various fruits or milkshakes and cocktails, as well as tea and coffee, with thistle honey.

Harvested plant species:

One of the most spectacular blossoms in untouched nature are the wild thistles. Our bees collect their nectar from April to May, mainly in Sardinia in the Monteferru mountains (nature reserve), supported by the careful work of our Italian partner beekeepers. These special blossoms give our honey its distinctive taste and pure purity.

Ingredients:

Honey is a pure natural product collected by bees without any additives. The thistle honey comes in a 500g jar.

Storage, Tips, and Shelf Life

Storage:
Store at room temperature for optimal freshness.

Tips:
If you buy thistle honey and don't need it right away, put it in the freezer (not the refrigerator) to keep it liquid. The cold slows down molecular movement so much that sugar crystals cannot form. For example, if you put a liquid honey that normally crystallizes after 3 weeks in the freezer and take it out after a year, it will remain liquid. The ingredients and quality are preserved 100%. To make crystallized honey liquid again, we recommend placing the honey in a water bath at about 40 degrees Celsius. After a few minutes, your honey will regain its original consistency.

This very popular honey crystallizes strongly after about 3–4 weeks.
