What is an Aceto Balsamico di Modena IGP Invecchiato?

“Invecchiato” means “aged”, and for Aceto Balsamico di Modena IGP it is a protected additional designation. It may only be used for balsamic vinegar that has aged for at least three years in wooden barrels and reached a density of at least 1.15. By comparison, a standard IGP balsamic only has to mature for 60 days and reach a density of 1.06. Ageing is monitored, and the barrels can be sealed by an independent body when they are filled.

The three years are a minimum, not a maximum. The designation sets no upper limit. So “Invecchiato” on its own tells you little about how long a balsamic vinegar actually spent in the barrel. It can mean three years or half a lifetime. Oro sits at the top end: according to Acetaia Cattani, it has aged for 40 years.

Information about Aged Balsamic Vinegar of Modena IGP – Cattani Oro, Aged 40 Years, 250 ml

About the product

What 40 years in the barrel do to an aged balsamic vinegar

A balsamic vinegar matures by losing water. Every summer some of it evaporates through the wood of the barrels, and what remains becomes thicker, sweeter and more aromatic. According to Acetaia Cattani, Oro has been through this process for 40 years. A look at the nutrition information shows how much difference that makes: Oro contains 82.8 g of sugar per 100 ml, our organic balsamic for everyday cooking 49.1 g. Both are made only from grape must and wine vinegar; the difference comes from the time in the barrel.

A family acetaia in its fourth generation

Acetaia Giuseppe Cattani is part of Casa del Balsamico Modenese on the Via Emilia in Modena. The Cattani family has practised this craft for more than four generations, handing down its recipe from father to son. The must for Oro comes from the family’s own hillside vineyard. It is aged in many barrels made from different woods, each of which gives its own aromas to this barrel aged balsamic vinegar.

Aged balsamic vinegar of Modena vs. Tradizionale: two different products

Anyone looking for an old balsamic will come across two protected designations. Aceto Balsamico Tradizionale DOP is made only from cooked must and ages for at least 12 years. Aceto Balsamico di Modena IGP Invecchiato is made from cooked grape must and wine vinegar and must age for at least three years. Oro belongs to the second group, but its ageing period goes far beyond the minimum – which is also why it is such a thick balsamic vinegar.

Frequently Asked Questions (FAQ)

What is aged balsamic vinegar?

“Invecchiato” means “aged”. For Aceto Balsamico di Modena IGP the term is protected: the balsamic vinegar must have aged for at least three years in wooden barrels and reached a density of at least 1.15. There is no upper limit.

Where does the 40-year figure come from?

Acetaia Cattani has confirmed the 40-year ageing period to us in writing. The IGP designation “Invecchiato” itself only sets the minimum ageing period of three years. How much longer a balsamic vinegar matures is up to the producer.

What is the difference between balsamic vinegar of Modena and traditional balsamic vinegar?

Aceto Balsamico Tradizionale DOP is a separate protected designation. It is made only from cooked must and ages for at least 12 years. Oro is an Aceto Balsamico di Modena IGP Invecchiato: cooked grape must and wine vinegar, aged for a very long time in wood.

How do you use aged balsamic vinegar?

Drop by drop and unheated, as a final touch. It goes well with aged Parmigiano, strawberries and figs, over vanilla ice cream, on carpaccio or risotto. It is too good for cooking or for a salad dressing.

Why is this balsamic vinegar so thick?

During the long ageing period, water evaporates through the wood of the barrels every year. What remains becomes denser and sweeter. You can see this in the nutrition information too: 82.8 g of sugar per 100 ml, all of it from the grape must.

Does it contain additives or sulphites?

It contains only cooked grape must and wine vinegar, no caramel and no added sulphites. Sulphites form naturally during fermentation, which is why the label states “contains sulphites”.

Does balsamic vinegar go off?

Unopened, it keeps until the best-before date on the bottle. Stored cool, dark and upright, it also keeps for a long time after opening. It does not need to go in the fridge.

How is Oro different from your organic balsamic vinegar?

Both come from the same house, Casa del Balsamico Modenese in Modena. Our organic balsamic is an Aceto Balsamico di Modena IGP for everyday cooking. Oro is the oldest line from Acetaia Cattani and is used drop by drop.

Is Oro a good gift?

Yes. The 250 ml bottle comes in a cardboard gift box with a gold label, making it a fine present for anyone who loves to cook or appreciates good food.
